MANGO SALSA
Ingredients:
•2 ripe mangos,peeled, chopped to 1/2 inch cubes
•1 cup jicama, peeled and chopped to 1/4 inch chunks
•1 tomato chopped to 1/2 inch pieces
•1 yellow or red bell pepper, diced
•small handful of cilantro, washed and chopped
•2 jalapeno, seeded and finely chopped
•juice from 1 lime
•4 shallots, finely chopped
